So how do I know which headset is right for me and my phone system?

The basic choices are:

monaural or binaural (one ear covered or both).

Then the next decision is a band over the head or an ear clip.

Noise cancelling microphone or not. A noise cancelling microphone reduces the surrounding noise in the room. This is not essential unless you work in a noisy environment. However if you intend to use a cordless headset where you can wander from room to room or even out to the car park a noise cancelling microphone would be a worthwhile feature.
